Cookies with Substance


When I'm craving something sweet, I eat it. Yes, seriously. I don't deprive myself so I am easily satisfied. I do like to reach for something sweet that also has load of nutrients, most of the time.


This week I made the most incredible, satisfying, nutritious oatmeal pecan chocolate chip cookies. It's a mouthful to say!

These cookies have more fiber, healthy fats, vitamins and minerals than a plain chocolate chip cookie. I also use dark chocolate chips which just make them even more special. So, here’s the recipe!



Gluten Free Oatmeal Pecan Chocolate Chip Cookies!


Makes about 3 dozen!


Ingredients

  • 1 stick unsalted butter, at room temperature

  • 1 cup coconut sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon milk of any kind

  • ¼ cup applesauce

  • 1 cup gluten-free flour

  • 1/2 teaspoon course sea salt

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1-1/4 cup gluten-free old-fashioned oats

  • ½ cup chocolate chips (I love dark)

  • 1/2 cups pecans, chopped

Instructions

  • Cream the butter with coconut sugar in a mixer or by hand (doesn’t that smell heavenly?!)

  • Add the vanilla, milk and applesauce.

  • In a separate bowl, combine flour, salt, baking soda, and baking powder; add to the creamed mixture and beat to combine.

  • Stir in the oats, chips and nuts.

  • Refrigerate the dough for at least an hour (or longer). This helps the cookies with texture.

Preheat the oven to 350 degrees F

  • Drop by the rounded tablespoon (don’t flatten) of dough 1-1/2-inches apart on greased cookie sheets (or covered in parchment paper).

  • Bake for 12 minutes.

  • Let sit 5 minutes on the cookie sheet, then remove to cooling racks.
